A timeless highball, elevated by crystal-clear ice
The Tom Collins combines gin, fresh lemon, subtle sweetness and sparkling soda in a bright and refreshing classic. Served in a tall glass over one crystal-clear ice spear, it remains beautifully chilled while retaining its crisp flavour and elegant presentation.
Ingredients
• 50 ml gin
• 25 ml fresh lemon juice
• 15 ml simple syrup
• 75–100 ml chilled soda water
• 1 fresh lemon wheel
• 1 Velour Ice Spear
Method
1.Place one crystal-clear Velour Ice Spear in a chilled Collins or highball glass.
2.Add the gin, fresh lemon juice and simple syrup.
3.Gently stir to combine.
4.Top slowly with chilled soda water.
5.Garnish with a fresh lemon wheel.
The perfect ice
A long crystal-clear ice spear is ideal for a Tom Collins. Its slender shape fits naturally inside a tall glass and keeps the cocktail evenly chilled from top to bottom. The low surface area provides slow, controlled dilution while allowing the bubbles and fresh citrus flavours to remain bright.
Why it works
Fresh lemon brings acidity and freshness, while simple syrup balances the gin without overpowering its botanicals. Soda water adds length and effervescence, creating a light and refreshing serve. Finished with one crystal-clear spear, the Tom Collins becomes cleaner, more refined and visually striking.
